Happy National Peanut Butter Day! We may be partial, but can think of no better way to celebrate than with a creamy, dreamy peanut butter meltaway. This sweet and salty combination is hard to beat! For many confectioners, the peanut butter meltaway is a popular mainstay in their product line. If you have lots of customers who love your peanut butter meltaways, chances are they will perk up when you add a twist to this classic. We're not suggesting you change your recipe, but simply sharing inspiration to add to your collection of peanut butter confections. Roasted Peanuts This may seem obvious. Just as there are jars of creamy peanut butter and crunchy peanut butter at the grocery store, why couldn’t there be creamy and crunchy varieties of peanut butter meltaways? If you already make your peanut butter meltaways with chunks of peanuts, consider adding a smooth variety to your product lineup. Crispy Rice Cereal Candy makers have been adding crispy rice cereal to their peanut butter balls for decades. This week we’re gaining inspiration from one of the most underestimated fall ingredients—the sweet potato. While it’s unlikely that the sweet potato currently holds a spot in your collection of candy ingredients, we’re hoping you’ll give this surprisingly versatile super spud a chance to prove its worth in your candy kitchen this fall. If sweet potato casserole is part of your family’s Thanksgiving spread, you may have thought to yourself, “this is good enough to be dessert!” That’s not just because of the gooey, toasted marshmallows on top. When roasted, sweet potatoes weep liquid which can be reduced to a naturally sweet, thick and creamy texture similar to caramel sauce. Add sugar, butter and heavy cream to make a more earthy variation of caramel or omit the dairy completely to make a vegan caramel. Spiced Sweet Potato Caramels Like sweet potato casserole, but better! This recipe is similar to pumpkin caramel, but with pureed sweet potato. You could use canned sweet potato puree to save time, but more importantly, consider layering this caramel with marshmallow to achieve the full sweet-potato-casserole effect. Or coat in chocolate and top with sea salt, because, why not?! Dulce de leche and Sweet Potato Though a turkey shape may be a timelier application here, we’re loving this combination of dulce de leche, sweet potato and sea salt encased in dark chocolate. Salted Cashew Sweet Potato Fudge Although unexpected, canned yams and cashew butter contribute to the rich flavor of this fudge recipe. Give it a try and you may find it to be a new fall favorite. Sweet Potato Dark Chocolate Bar Inspired by dulce de batata (a Dominican sweet potato pudding), this bean-to-bar chocolate maker uses sweet potato as substitute for animal milk in their vegan chocolate line. Sweet Potato Caramel Sauce This approach is not for everyone, but if you enjoy experimenting and can appreciate a very minimal ingredient list and/or want to grow your vegan customer base, this two-ingredient recipe for sweet potato caramel sauce may be worth a try. This sauce could be used for savory or sweet applications and could the base for a number of other sweet potato experiments. Move over pumpkin and make room for the versatile sweet potato as a new favorite fall ingredient! Not only is the sweet potato a beloved addition to many holiday potlucks (shout out to sweet potato casserole and pie!), it is also a superstar in the vegan community. Consumers’ flavor preferences are divided between two trends. One based on comforting and nostalgic, more traditional flavors and the other on novelty, experimentation and intensity. These are not mutually exclusive; consumers will migrate between the two based on individual needs and external factors, shared Chiara Calcagnini and Eva Teyssier with Barry Callebaut in an article written for RCI’s Kettle Talk magazine. Experimental: Caramel with a Twist Consumers love to try out new flavor combinations. A caramel flavor with a twist can provide enough of a familiar ground to persuade them to take the plunge towards novelty flavors or ingredients. Twists also bring new life and interest to offerings that may otherwise be overlooked because they’ve been seen so many times before. Twists and pairings Caramel pairs wonderfully with a variety of different inclusions to create multi-sensorial experiences. Combinations with healthier inclusions like seeds, nuts and dried fruits are especially appealing for consumers. All sorts of caramel twists including combinations with cocktail-based flavors, rosemary and sea salt, cocoa nibs, etc. can bring your caramel creations to a next level and create an elevated and premium perception. Caramel also has incredible potential to satisfy various eating occasions and consumer needs. For example, caramel and caramel products are the perfect solution for the rising trend of on-the-go consumer snacking. In the spirit of exploring new and creative twists on caramel, we’re sharing 3 variations of caramel flavors to try this fall. Old Fashioned Cocktail Caramels If a caramel walked into a bar—a swanky, retro bar—it might walk out tasting like Shotwell Candy Co.’s “Old Fashioned” Cocktail Caramels. Described as “buttery soft caramel, infused with aromatic bitters, barrel-aged bourbon, and orange extract.” Salted Rosemary Caramel Sauce For herbaceous twist on your class caramel recipe, add a hint of fresh rosemary. To capture the attention of The Party Shopper, identify your products that meet one or more of the following criteria: - Visual appeal | Products with unique shapes and bright colors will appeal to shoppers looking to shock and delight! As mentioned in last week’s post, reaching out to existing customers who may not think of your store as a destination for Halloween candy is a great place to start! Capture party planners early and last-minute shoppers in October by sending out themed email blasts to your customer list letting them know of your Halloween selections. Take advantage of visual media to communicate your Halloween offerings. If your business is not on Instagram or TikTok, now might be a good time to test one or more of these social media outlets. August may have just begun, but when you see school supplies fill the store aisles, you know fall is just around the corner.
There's something warm and comforting about caramel corn in the fall--but sticky, clumpy caramel corn is no fun at all! After reading this week's quick tip, you will never want to make caramel corn without this ingredient!
If your caramel corn sticks together and becomes difficult to separate, adding lecithin will help. Randy Hofberger of R&D Consultants advises mixing lecithin with a little oil and adding this mixture at the end of your caramel corn recipe. This will help the caramel spread apart easier and save you the hassle of manually pulling it apart.
Allergy Alert!
It is advised that individuals with soy allergies do not consume products that contain lecithin. Although lecithin is a byproduct of soy, there is always a chance soy protein will find its way into lecithin. Lecithin derived from sunflower or canola are more allergy-friendly alternatives to soy.
Don’t cry over spilled lecithin.
Resist the urge to clean spilled lecithin with a damp cloth or spray cleaner, which will cause it to gum-up and make it worse. Instead, cover the spill with sugar and it will clean right up without a sweat.
New Flavor Inspiration
Once you’ve perfected your caramel popcorn recipe, consider experimenting with different flavors and ingredients to take your corn to the next level. Here’s some inspiration for the upcoming fall season.
Bourbon Caramel

They say everything is better with chocolate, but is it?
We’ve uncovered some oddly popular and some surprisingly tasty pairings. We’ll leave it up to you to determine if they really are better with chocolate.
Beef Jerky
This salty, sweet and chewy combination is sure to stir some excitement among jerky fans. Plus, with so many varieties of jerky available the options are seemingly endless. We suggest adding another element of texture by topping the chocolate coating with crushed nuts, candy pieces, drizzled caramel, dried fruit or savory spices like smoked paprika or red pepper flakes.
Cheetos®
If your customers love your chocolate-covered potato chips, this seems like a natural next step. As an added bonus, coating Cheetos in chocolate will help to avoid the dreaded orange Cheeto fingers.
Chickpeas
Packed with protein and fiber, chickpeas (aka garbanzo beans) are super popular right now—see for yourself with a quick internet search. When chickpeas are roasted, they take on a crunchy snack-like quality. Try coating them in chocolate and sprinkling them with a little sea salt and you are bound to catch the attention of chickpea enthusiasts with this nutritious sweet treat.
Chili Peppers
Chocolate-covered chili peppers—perhaps with a dash of sea salt fall right in line with one of the biggest flavor trends of 2020; spicy-salty-sweet. From habaneros to jalapenos to sweet peppers and everything in between, there’s so many varieties of peppers you decide how daring you want to be. **Bonus points if you stuff peppers with peanut butter.
Corn Nuts
We first learned about this addictive combo while touring the R&D department at The Blommer Chocolate Company in 2017. We give this sweet and savory mix of chocolate and toasted corn kernels two thumbs up. Try it for yourself and tell us what you think.
Onions
Chocolate-covered onions? It sounds like an April Fools’ Day joke. As the story goes, the idea started as a prank. Today Mueller Chocolate Co.’s chocolate-covered onion has developed into a “cult favorite” for tourists and food bloggers visiting Philadelphia. For the record, it is unanimous that the chocolate-covered onion is as disgusting as it sounds.
Peanut Butter Filled Pretzels
Sometimes kids have the greatest ideas. This idea came from the son/grandson of the family business, JoyLyn’s Candies as a sweet snack idea and it was a hit. If you have combined chocolate with peanut butter and chocolate with pretzels, but you’ve never tried the three together, you’re in for a treat.
Pickles

Rather than working with raw quinoa (which might chip a tooth), puffed quinoa is a better medium for coating in chocolate. Puffed quinoa is easy to make yourself (a lot like stovetop popcorn—check out this recipe) or you can buy puffed quinoa (
see here).
Wasabi Peas
If you like the crunch of chocolate-covered Cheetos and the heat of chocolate chili peppers, these little spheres of goodness are the best of both worlds.

Now that fireworks from the 4th of July have fizzled, it’s time to look forward to the next major holiday! Many Americans have already started making arrangements for Labor Day on September 3, while our Canadian friends may be counting down until Civic Day on August 6, however, any bacon fan worth their salt is already salivating for International Bacon Day(otherwise known as “IBD” by bacon fanatics) on September 2.
Even if you don’t regularly observe IBD, you can agree the salty flavor and crunchy texture of bacon, paired with sweet chocolate is a match made in hog heaven (okay, maybe just heaven). There’s a seemingly endless array of ways to pair bacon with chocolate. Whether you’re working with bits, chunks, strips or not-so-delicate bacon roses, this little piggy may bring with it different requirements from your local health department that you should be aware of before you grab that skillet.
Here’s some ideas, if you decide to go whole hog:
If you don’t want to take the risk of using real bacon in your recipes, consider using bacon flavoring or smoked bacon sea salt for a more subtle flavor. If you really want to make your local bacon fans squeal, ask your fans to share ideas for bacon-related confections they’d like to see at your shop or let them vote for their favorite once you’ve narrowed down some realistic options.
