If you're aiming to give your boxed chocolates a more luxurious appeal, consider adding a single premium chocolate to each box and place it at the center making it the focal point. By incorporating just one high-end or expensive piece, you increase the perceived value of the entire selection. This elegant centerpiece naturally draws attention and suggests that your chocolates are of premium quality. By adding a high-end piece, you also may be able to raise the price and potentially increase your profit margin.

Hazelnut Gianduja

10 Variations for your Peanut Butter Meltaways

Happy National Peanut Butter Day! We may be partial, but can think of no better way to celebrate than with a creamy, dreamy peanut butter meltaway. This sweet and salty combination is hard to beat!

For many confectioners, the peanut butter meltaway is a popular mainstay in their product line. If you have lots of customers who love your peanut butter meltaways, chances are they will perk up when you add a twist to this classic. We're not suggesting you change your recipe, but simply sharing inspiration to add to your collection of peanut butter confections.

Roasted Peanuts
This may seem obvious. Just as there are jars of creamy peanut butter and crunchy peanut butter at the grocery store, why couldn’t there be creamy and crunchy varieties of peanut butter meltaways? If you already make your peanut butter meltaways with chunks of peanuts, consider adding a smooth variety to your product lineup.

 

 

Crispy Rice Cereal
Candy makers have been adding crispy rice cereal to their peanut butter balls for decades. Consider this variation a nod to yesteryear or, better yet, blow their minds by experimenting with chunks of Rice Krispies Treats® (yes, with marshmallow) added to your recipe.

 

 

Graham Crackers
Adding graham cracker crumbs will create a firmer texture and a different, yet familiar, flavor variation. Some say this addition makes peanut butter meltaways taste more like Reese’s Peanut Butter Cups®.

 

 

Sea Salt

In case you're not familiar with this ingredient, flour salt has been pulverized to achieve an ultra-fine, powdery consistency. This ingredient will enhance the peanut flavor while maintaining a super smooth, velvety texture.

These crispy little wafers are sure to elevate your peanut butter meltaways. They can also be used for a simple, yet sophisticated garnish.

 

 

Banana Chips
Adding chunks of dried banana chips to your meltaways will deliver both crunch and flavor. If you’re really adventurous, experiment with adding banana chips and crispy bacon bits as an homage to Elvis Presley.

 

 

Marshmallow
Let your inner child lead the way! This could be a layer of marshmallow, marshmallow fluff or mini marshmallows…better yet, Lucky Charms® mini marshmallows.

 

 

Vanilla + Almond Extract
Boost the nuttiness of your recipe by adding a splash of almond extract, along with the vanilla.

 

 

Quinoa

Just when you think rich and buttery caramel couldn’t get any better, a dash of sea salt can take it to the next level. Marked as a hot flavor trend in 2008, this sweet and salty power couple continues to prove its staying power.

Chocolate-covered sea salt caramels are a customer-favorite for many RCI members. If you’re looking for new avenues to apply the magic of sea salt, keep reading for five confections that are even better with sea salt.

 

 

Caramel Apples
Elevate your caramel apples with a drizzle of chocolate and a sprinkle of sea salt. Not only does this application stimulate the taste buds, the addition of delicate sea salt crystals levels up the sophistication.

Toffee
It just makes sense to pair buttery and nutty confections with a dash of high-quality sea salt. It’s no surprise toffee and sea salt are a winning combination.

Caramel Popcorn
If you make caramel popcorn, a sprinkle of coarse sea salt crystals, like fleur de sel, can instantly elevate your product and add another variety to your product lineup. Invite customers to sample the new combo, touting “if you love our caramel popcorn, wait until you try it with sea salt!”

Think twice before limiting lemon and sea salt to savory seafood dishes. This flavor combination is popular in Asian confections and can be seen in various applications in North America. If you’re looking for a more unexpected application, consider ways to incorporate sea salt with your lemon-flavored confections—such as a touch of sea salt to chocolate-covered lemon creams. Alternatively, we love this idea of lemon sea salt peanuts from Belmont Peanuts. Described as “a flavor match made in peanut paradise,” this pairing is worth a try!

 

Sea salt can instantly add value to confections, along with an undeniable punch of flavor and satisfying crunch. When adding a twist to any product, even if just a dash of salt, we highly recommend offering samples in-store and heavily promoting the new product (with photos, of course) on your website and social media outlets. Staging your salty, new products atop a generous mound of coarse sea salt crystals (think pink with pink Himalayan Sea salt, if you use it in your application) can both be visually appealing and reinforce the message even if the consumer doesn’t read the description.

Tip #318: Enhance Your Confections with Gourmet Sea Salt

In recent years, the application of sea salt in confections has evolved from strictly artisanal to mainstream in the candy industry. According to Synergy Consultants, sea salt was introduced to nearly 1,350 food products in 2010 alone. If you have not yet jumped on this bandwagon, you may be missing an opportunity to engage consumers and increase sales.
 
RCI member, Boehm’s Candies of Issaquah, Washington first introduced gourmet sea salt to their confections in 1999. At the time they wondered if it would be a quickly passing fad. Today, the candy maker carries a variety of confections featuring distinctively different gourmet sea salts, contributing to at least 100 pounds of finished product every week to satisfy customer demand.
 
Pulled from an article in RCI’s Kettle Talk magazine, Bernard Garbusjuk attributes the trendiness of sea salt to our love of the sweet and salty combination. “In our production, we have tested different salt profiles for various confections, but we believe that the most complementing marriage is between caramel and salt. If you are very careful balancing a recipe, then it can also work well for solid chocolate pieces.”
 
With the growing popularity of sea salt in a variety of applications, featuring a gourmet sea salt with a unique color, flavor, coarseness and even origin will help you create a more signature product. Keep reading for three of Boehm’s favorite gourmet sea salt varieties, as well as recommended applications for each.
 
Hawaiian Sea Salt Blend
Natural sea salt blended with the rare alaea sea salt from Hawaii. The alaea salt can be identified by its distinct red color achieved by mixing with volcanic clay.
 
Boehm’s standard sea salt caramels are topped with a blend of two different salts from the Hawaiian Islands. The alaea salt is from the island of Kauai and has a distinct red color from the volcanic clay, and the white salt is from the island of Oahu. The finer grain of the salt from Oahu will disperse in your mouth somewhat faster than the coarser alaea salt and the blend of size and color give the caramel an elegant, upscale finish.
 
Ilocano Asin
A mild, mineral rich sea salt from the pure seawaters of Pangasinan, Phillippines. Bright, crisp flavors powered by underlying minerals combine in this complex and well-balanced salt.
 
At Boehm’s they created a thin wand of twisted caramel (about the length of a licorice stick), covered it in chocolate and finished it with the Ilocano Asin salt. This caramel and sea salt “stick” satisfies customers who want a more robust salt profile. Simply because of how you eat it, it can taste remarkably different than the square sea salt caramel.
 
Smoked Alder Wood Sea Salt
A Pacific sea salt is slightly smoked over red alderwood.
 
As part of their boxed chocolates, Boehm’s adds a caramel with smoked alderwood sea salt to represent the Pacific Northwest. Consider sourcing a sea salt that reflects the flavors and ingredients representative of your area.
 
If you can brand a unique sea salt product with a distinctive flavor or coarseness, or from a special region (Himalayan, Mediterranean, etc.), you may be surprised how it effects your sales compared to if you use a non-descript sea salt.
