Creative Easter-Themed Product Names Generate Interest

Posted By RCI, Tuesday, March 14, 2023
Updated: Tuesday, September 5, 2023

Want to refresh your line of confections for Easter with little to no effort? You don't have to create entirely new recipes or invest in costly advertising campaigns to get customers excited about your products; all you really need is a bit of imagination. By giving your existing confections a new name themed for Easter, you can create more interest and drive sales  with simple additions or, better yet, without actually changing anything but the name. In this blog post, we'll explore some creative ways to give your confections a fresh twist for the Easter season.

Rabbit Tails

Simply rename your chocolate-covered marshmallows as “Rabbit Tails” for a quick and easy refresh. Cute labels, like the one pictured from RCI member Abdallah Candies, can be created on Canva to draw attention and add excitement to an existing product.

Bunny Feed + Bunny Poop

Just for the Easter holiday, RCI member Bruce’s Candy Kitchen renamed candy-coated, chocolate-covered sunflower seeds as “Bunny Feed.” They also sell packs of colorful Sixlets® as “Bunny Poop.”

Cottontail Crunch + Chick Feed

Add pastel-colored Easter candies, jelly beans, yogurt-covered raisins or (whatever spring treats you have on hand) to your existing trail mix or caramel popcorn and give it a clever name like, “Cottontail Crunch” or “Chick Feed." Target sells a limited edition Easter-themed trail mix called “ Bunny Bait” and RCI member Marie’s Candies adds Easter candy corn to roasted peanuts for a sweet and salty “Bunny Tracks Mix.”

Bunny Bark

Make subtle changes to your existing bark recipe by adding pastel sprinkles or candies and rebrand it as “Bunny Bark.”

The goal is to bring excitement and fun to your normal offerings, making something new with very little change or without changing anything but the name. Look through your inventory to identify items that can be reimagined for Easter. With a little creativity, you could see a bump in lemon buttercream sales by rebranding them as “Ducktails.” Or why not rename your coconut creams as “Cottontails" for the holiday?

Capture the spirit of the season with a little imagination and every bunny will want a taste of your Easter-themed treats!

Generate Excitement with Limited-Edition Confections

Posted By RCI, Tuesday, January 17, 2023
Updated: Friday, January 20, 2023

“Limited edition” products exist across all industries including technology, fashion, cosmetics and, of course, food. RCI member, Kate Wadman with Cargill Cocoa & Chocolate shares how companies big and small often use this strategy to break through the noise of evergreen activities (known for being relevant, though repetitive) in the market and pull consumers in.

Why does this work?

At its core, “limited edition” speaks to basic economics of supply and demand. Offering unique items for only a set time can increase demand and create an elevated value for those items, as well as the overall brand. This sense of immediacy and exclusivity kickstarts the desire to buy and experience.

“Limited edition” or “special edition” also gives the product a new or never-before-seen feel that generates excitement and plays on consumer FOMO or “fear of missing out.” Consumers are attracted to a new experience for simply that, something new. They also have an innate urgency to engage, because they don’t want to lose out and are fearful they may not have the same opportunity again.

Finding Inspiration

It’s one thing to create a limited-edition item. It’s another thing to keep the inspiration flowing for an entire line or consistent calendar of goodies.

To supplement ideation and creation of special-edition items, look to limited-time offerings in other spaces for inspiration or even to use as an ingredient itself. That’s exactly what Joe Sofia, Cargill Cocoa & Chocolate Technical Advisor, did when tasked with exploring the limited/special edition concept.

Additionally, inspired by overarching industry trends of nostalgia and sensory, Joe looked to create a recipe rooted in the limited-time offer mindset, but would also come alive in its experience and pack an emotional punch. Enter Sour Patch Kids® cereal. A much-loved candy since the 1970s, Sour Patch Kids has seen its fair share of expansion into other items, but the recent jump to a cereal inspired by the flavor might be its most unique. And it certainly fit the bill for a unique and special offering.

Four simple ingredients later, Sour Patch Kids Bark was born. White confectionery coating served as the canvas for the cereal while preserving texture and a small amount of citric acid crystals amplify the sour. Topping it off with actual Sour Patch Kids candy, added additional color to hit sensory at another eye-popping angle. Click here to download the recipe from Joe Sofia and Cargill Cocoa & Chocolate.

Opportunity To Play

It’s worth noting that not every limited-edition product works for everyone. It’s important to experiment and play around to create something that speaks to your specific customers. A great part of limited edition is that you’re not committed to it forever. If it doesn’t work, try something else. Once you land on the right flavors and the right mix, your limited-edition product can pack a powerful punch.

Candy for Breakfast: Breakfast Cereal Sweets

Posted By RCI, Tuesday, February 8, 2022
Updated: Wednesday, April 13, 2022

Unleash the inner childlike wonder with comforting and nostalgic breakfast-cereal sweets! Let’s be clear, we’re not talking about cereal that says, “made with whole grains” on the box. We’re talking about the sugary cereals that we had to beg our moms for in the grocery aisle. Victory couldn’t be sweeter…until now!

The Kerry Group identified nostalgia as one of the key trends influencing the food and beverage sector in 2022. Nothing quite brings you back to the Saturday mornings of watching cartoons as a kid, like a bowl of sugary cereal…and wouldn’t you know it, National Cereal Day is March 7!

There’s no doubt candy brand Kit Kat® recognized the feelings of nostalgia consumers have toward breakfast cereal with its limited-edition Kit Kat Fruity Cereal candy bar released in June 2021. Studded with crunchy cereal and colorful mini marshmallows, Compartés Cereal Bowl Chocolate Bar is one of the luxury chocolate brand’s most popular chocolate bars, which retails at $9.95. As if cookies for breakfast weren’t indulgent enough, Exquisito Chocolates combines toasted white chocolate with Cookie Crisp™ cereal for a “Cerealously Amazing” chocolate bar, which retails for $8.

Chocolate bars may be the more obvious approach to the breakfast cereal trend. For ideas more outside the cereal box, infuse cream or condensed milk with fruity cereal to create a cereal milk fudge. Adding iconic cereals like Lucky Charms™ and Froot Loops® to hot cocoa bombs or a sweet snack mix is an easy refresh for existing products. Try substituting nuts for cereal to put your own sweet spin on a brittle, cluster or a chocolate and caramel turtle.

As for some marketing inspiration, we’re loving these playful graphics created by Sugarfina to launch their “Candy For Breakfast” campaign in 2018. With the addition of a colorful background and some thoughtful props, you could easily recreate a similar look of your own to create excitement about your products.

Now we’re giving you permission to take a stroll down the cereal aisle (not that you need it), fill your shopping cart with all your childhood favorites and start creating!

Create One-of-A-Kind Confections with Color

Posted By RCI, Wednesday, January 26, 2022

For a fun pop of color and whimsy to liven up your favorite coated confections, try a technique adopted from marbleizing paper. Use either tempered white chocolate or compound coating as your base and add a few drops of oil-soluble color to the top of the white base. The use of 2-3 different colors is recommended to achieve the marbled affect. Gently swirl the colors into the base, but do not overmix as you want to see the various colors. Dip precut pieces of parchment, cookies, truffles, pretzels, etc. into the coating and cool. If you use parchment, once it cools, gently peel away the paper and you are left with a colorful piece of edible art.

This fun and colorful technique can be used to enhance your dipped confections or barks for any holiday or occasion using different color combinations. We recommend recording a video or taking a series of photos to share the process with your social media followers.

Add Glam to Your Confections with Texture

Posted By RCI, Wednesday, January 26, 2022

Do you want to add an impressive finishing touch to your chocolate confections? Add dimension to your confections with the use of texture sheets.

Texture sheets are made from embossed plastics and can be used over and over again. Designs range from checkerboard patterns, to snake skin, to swirls and everything in between. Full sheets can be cut to any size to suit your needs. They can be used in place of traditional cocoa butter transfer sheets, when used in conjunction with magnetic mould frames. Both sides of the texture sheet can be used to create concave or convex impressions.

Although thicker texture sheets can present a challenge with magnetic mould use, they can be used in other ways too. For example, experiment by painting a full texture sheet with tempered chocolate before adding inclusions, like dried fruit and nuts, to create a unique bark. The textured pattern can be showcased on one side, while the other side reveals the inclusions.

Another method for utilizing texture sheets involves cutting the sheet into small squares to be placed onto pieces as they exit an enrober. This works similarly to cocoa butter transfer sheets, where the texture sheet side coming into contact with the chocolate will transfer the design as it sets up.

Finally utilize your texture sheets by applying a thin layer of chocolate to texture sheet. Once chocolate has set, use a knife or cookie cutters to create shapes to adorn your confections.

See for yourself by experimenting with texture sheets to add interest and dimension to your confections.

5 Questions About Colored Cocoa Butter Answered

Posted By RCI, Tuesday, April 13, 2021
Updated: Friday, August 20, 2021

Using colored cocoa butter is a great way to add detail and pops of color to your chocolate confections. This week Tomric System's Chef Brian Donaghy shares the basics of using colored cocoa butter and answers five common questions that he gets asked all the time.

Since Chef Brian first learned how to use colored cocoa butter with chocolate confections in a master class taught by Norman Love of Norman Love Confections in 2002, colored cocoa butter products have improved and the techniques have exploded exponentially. The process, however, is still fundamentally the same: (1) an emulsion of fat- soluble color and cocoa butter is applied to the inside of a mould (2) the cocoa butter is allowed to partially crystallize (3) tempered chocolate is placed in the mould and the chocolate and cocoa butter crystallize together, so when the chocolate piece is unmoulded it has shine and color. The process is fairly simple, but requires a process.

What equipment do you use? “I use an Iwata Smart Jet airbrush compressor set to around 50 psi and Badger 250 airbrushes and I use separate airbrushes for each color. A laser thermometer is another “essential” tool for this process.”

How do you temper cocoa butter? “I melt my cocoa butters to 93° F/ 33.9°C and then seed them with cocoa butter "silk" from my EZ Temperer.”

How do you achieve an even layer of colored cocoa butter?

“Prior to spraying in the mould, I always spray away from the mould first—this ensures that the cocoa butter is spraying correctly.”

What’s an easy method for taking your airbrush technique to the next level? “I have taken to masking my moulds so that the color does not coat the entire mould—this makes for an interesting effect.”

How do you make colors pop against chocolate? “Spray white colored cocoa butter last to ensure that we can see the colors in dark chocolate. For some colors, like red, I will spray black last, because it creates a beautiful finish.”

Whether you’re interested in using colored cocoa butter for the first time or you’ve already perfected your techniques, we hope this post helps inspire you to take your decorating skills to the next level.

Catch a Leprechaun with Sweet St. Patrick’s Day Treats

Posted By RCI, Tuesday, February 23, 2021
Updated: Friday, August 20, 2021

Try your luck this St. Patrick’s Day with treats so tempting, you might just lure a leprechaun into your candy shop…along with new and returning customers too!

Blarney Bark

What leprechaun could resist a bite of “Blarney Bark” from RCI member, Reid Candy & Nut Shop, of Cambridge, Ontario. These festive treats are made with green compound coating and bits of rainbow stripe candy, colorful candies and clover sprinkles.

Irish Potato Candy

A popular St. Patrick’s Day treat, Irish potato candy was neither invented in Ireland nor does it typically contain potatoes. RCI member, Dolle’s Candyland of Ocean City, Maryland makes their Irish potatoes extra decadent by coating coconut cream in rich, dark chocolate before rolling them in a blend of cocoa and cinnamon. Milwaukee-based RCI member, Burke Candy & Ingredients combines shoestring potato sticks with their coconut dough before rolling their version of Irish potatoes in cinnamon and sugar.

Pot of Gold Truffles

Transform your existing truffle or meltaway recipe into pots of gold fit for teams of leprechauns. Create the flat top of the “pot” by flattening or trimming one side of the round center before coating it in chocolate. Once set, pipe chocolate onto the flat top of the pot and use it to adhere rainbow candy and gold sprinkles.

Leprechaun Cookies

These leprechaun cookies are so clever, they’re likely to leap right off your shelves and into customers’ shopping baskets. With a little green and orange confectioners coating, some candy eyeballs and a pinch of finesse with the piping bag you’ll have yourself an army of jolly good leprechauns.

Chocolate-Covered Pickles

If you dip it, they will come. This salty and sweet combination is just bizarre enough it is sure to catch the attention of the more adventurous consumers looking to try something new. Malley’s Chocolates of Cleveland has had success (and garnered plenty of media attention) over the years coating dill pickles in chocolate exclusively for St. Patrick’s Day.

Anyone who receives treats like these is sure to count themselves lucky this St. Patrick’s Day! Share your favorite St. Patrick’s Day treat in the comments below.

Halloween is expected to look a little different for many communities in 2020. Families may be looking for different ways to treat their kids and close friends this year.

If you already make chocolate-covered pretzels, truffles or marshmallow pops, the following ideas will require very little, if any, additional ingredients and minimal effort. Keep reading for  five quick and easy tricks to dress up your existing treats for Halloween.

Ghostly Pretzels

Your fans will scream with delight over these ghostly pretzels. To accomplish this look, cover bowtie pretzels with white chocolate, then pipe white chocolate into top two holes and embellish with candy eyeballs.

Truffle Eyeballs

Transform your white chocolate truffles into eye-catching treats. Use a red edible marker to create veins all over the white truffle. Pipe a dot of colored chocolate or coating for the iris and top with a black M&M or other candy-coated chocolate as the pupil.

Witchy Fingers

It’s the details that transform ordinary pretzel rods into shockingly convincing witch’s fingers. As pictured, blanched almonds were painted with black gel food coloring to achieve this look (dark-chocolate-covered almonds would work too). A toothpick or wooden skewer may be used to imitate the wrinkles of the top and bottom knuckle. Click here to view a step-by-step tutorial.

Pumpkin Pretzels

If you’re looking for something less spooky, these cute pumpkin pretzels are as easy as they are cute. Embellish orange coated pretzels with sprinkles and a green M&M or candy-coated sunflower seed as the finishing touch. Click here to see how Simply As That blog, gave their pumpkin pretzels personality by adding faces.

Trend Alert: Create Craveable Confections Inspired by Churros

Posted By RCI, Tuesday, August 11, 2020
Updated: Monday, August 24, 2020
Looking for ideas to inspire your latest and greatest new product? Churros are a popular street food in Spanish and Latin American cultures, which have been gaining in popularity across America over the past decade. Not only are these sweet treats popping up in food trucks and high-end restaurants, various applications can be found in the confectionery industry.

Although these crispy and chewy fried pastries, often topped with cinnamon and sugar, aren’t a new development, they are expected to “dominate 2020’s dessert scene,” according to Webstaurant Store’s food trends report earlier this year.

Commonly characterized by a very generous coating of cinnamon sugar, you can transform just about any of your favorite confections into a churro-inspired treat. Tip: Add the extra element of crunch by incorporating Cinnamon Toast CrunchTM Churros cereal.

Churro Toffee

Abdallah Candies envelopes their buttery toffee in white chocolate before coating it in a mixture of cinnamon and sugar. It’s almost too pretty to eat, but we wouldn’t let that stop us!

Churro Popcorn

White-chocolate covered popcorn sprinkled with the churro’s signature cinnamon sugar combo, may be just what you need to recreate the crispy, chewy texture that the churro is known for. For extra cinnamon flavor, this recipe coats popcorn in melted cinnamon chips.

Churro Truffles

Nothing quite beats rolling all the goodness that makes a churro into a decadent truffle. Check out this recipe for churro truffles from Peter’s Chocolate.

Here’s just a few ideas to put your own spin on churros as part of your confectionery line-up, but don’t stop here! Imagine how you could transform your signature caramel recipe or scratch-made marshmallows to capture the flavors and textures of the churro? Tell us all about your ideas in the comments below.
