Available for all skill levels, Truffles + More is a three-day intensive course is designed to help candy makers learn the science behind formulations and trouble shooting techniques for truffles, meltaways and nut pastes. In addition to classroom-style learning, participants will gain hands-on experience in the kitchen making variations of these popular confections using several different applications.

ENROLLMENT & TUITION
Registration is available on a first-come, first-served basis to the first 25 registrants. Deposit and enrollment should be confirmed by RCI before making travel and hotel arrangements.

Tuition includes registration fees, course materials, kitchen ingredients, instructor expenses, daily shuttle from the host hotel to course site and lunch during the course. A 50% deposit is required to confirm registration. The remaining balance is due by July 12, 2024.
Grants Available: The Allured Fund for Confectionery Education provides grants to those people who would like to attend an educational event in the U.S. confectionery industry, but are unable to attend due to financial hardships.
