Perfecting the Artisan Ganache
Charles Niedermyer II, Pennsylvania College of Technology

Discover formula modifications designed to effectively extend the shelf life of ganache while maintaining product quality.

Charles is a Chef Instructor at Pennsylvania College of Technology, where he has been teaching baking and pastry arts since 2005. He is a 2018 Bake Magazine “Twentyfive” top educator, a 2017 Top Ten Pastry Chef in America by Dessert Professional Magazine, and holds several awards from Pennsylvania College of Technology, most recently a Distinguished Teaching Award in 2015. His industry experience includes bakeries, restaurants, hotels and clubs, specifically The Penn State Bakery and The Ritz-Carlton Hotel Company. Charles’ work extends well beyond the campus classroom. He is an active member of the Retail Confectioners Association of Philadelphia and The Bread Bakers Guild of America, teaching at educational conferences all over the country. Charles leads production at the Kentucky Derby each year, where his team cooks and bakes for thousands of guests. He is a guest instructor for the Department of Food Science at Penn State, teaching baking science and product development. In 2015, Charles was a national finalist for Team USA, which competed at the 2016 Coupe de Monde de la Boulangerie (The Bakery World Cup).

After joining Tap Packaging in 2013, Jordana Revella quickly rose in ranks and today serves as an executive at the company, overseeing sales, marketing, package design and account management. Jordana has worked to develop a clear strategic differential for Tap in the competitive paperboard packaging industry, specifically embracing the investment Tap made in digital print technology and combining it with a unique focus on partnership and agility. In 2014, Tap was one of the first to acquire the HP Indigo 30000, a digital offset printing press with unparalleled capability and print quality. Jordana’s keen understanding of both this technology and the practical application of digital print helped her to become known as an ambassador for digitally printed packaging. As a proven strategic leader, Jordana works with Tap’s employees and customers to ensure a smooth, value-adding packaging experience. She has been an active member of Retail Confectioners International since starting at Tap and served as the chairperson of the Supplier Advisory Council in 2016. Jordana earned her undergraduate degree in public relations from Kent State University and an MBA with an emphasis in executive leadership from Baldwin Wallace University.
