Experienced with small and large batch caramels, fudge, butter creams, brittles, ganache, etc. Reads and understands recipes, measurements, and thermometers.   • JOB DESCRIPTION: KITCHEN PRODUCTION  Michael Mootz Candies is looking for a hard working individual for our kitchen production position. Responsibilities: ·  Weighs, measures, mixes, and pours ingredients according to our recipes. ·  Agitates chocolate in melters, strains chocolate and starts pump and enrobing machines. ·  Using copper kettles, makes small batches of caramel, fudge, butter creams, brittles, etc. ·   Extrudes and shapes batches of candy through our various machines or by hand. ·  Reads and understand recipes, measurements, and thermometers. ·  Washes kettles, stoves, machines, utensils and equipment after each batch.
