Looking for solutions to problem candies? RCI members have the opportunity to schedule personal consultations during our new one-on-one appointments located on the expo floor. Consultations are exclusively for RCI members registered for the event and are available by appointment only. One appointment per company.

Finding Solutions to Problem Candies
Randy Hofberger, R&D Candy Consultants
Eric Schmoyer, Barry Callebaut

Randy Hofberger has been in the chocolate industry for more than 40 years. Currently Randy consults for the industry as R&D Candy Consultants, LLC, assisting with various challenges including product development and formulations. Randy will be specializing in questions about creams, caramels, toffees and brittles. 

Eric Schmoyer has been a Senior R&D Project Manager at Barry Callebaut since 2007. Although currently managing R&D and technical service matters, he also has experience with formulation, processing, and troubleshooting. Eric will be specializing in questions about chocolates, coatings, fat-based centers, enrobing, panning and moulding.
