Conventions & Conferences
RCI offers educational seminars and workshops at regional institutes and the national convention in addition to the courses below. Attendees learn at formal educational sessions and in hands-on demonstrations. RCI is the only organization giving conference attendees access to behind-the-scenes tours of chocolate and food production facilities at each RCI conference. Candy School Update
The Board of Directors and the Education Committee has reviewed the evaluations, comments and attendance reports from the most recent Candy Schools. Although the course has been successful in a number of ways they see the need to offer shorter courses. We are planning shorter 2-3 day courses focused on specific techniques such as ganache and truffles, caramels, etc. Courses will be offered at a manufacturing facility featuring a retail storefront and production kitchen.
